Apple Cake

This is simple and effective,one of the numerous apple recipes I collected when we had an orchard and the children had to eat apples every day for months just to avoid waste. It makes a lovely pudding fresh from the oven and a good cake cold the next day.



6 oz SR flour
3 oz castor sugar
1 egg
1 teaspoon baking powder
2 oz melted butter
6 tablespoons of milk


  1. Mix the dry ingredients
  2. Stir in the egg, and the milk. 
  3. Beat till smooth and then beat in 1oz melted butter. This will give you a thick batter like mixture.
  4. Spread it out into a shallow tin 11''x 7''
  5. Melt another 1 oz butter and pour/paint onto the top
  6. Lay 1lb or so cooking apples, cut into neat slices, in overlapping rows down the sponge - I find there is usually 3 rows across
  7. Sprinkle with some sugar mixed with cinammon, about 2tbsful
Bake No 5/175 30 minutes
Eat hot or cold
Yu can stretch the mixture to 2 x7'' round tins if you like and have enough apples for two cakes. English plums in season are delicious as the topping too

This is a firm family favourite! Made the golden plum version twice this week - once with 7 year old Isobel & her friend Elinor, and again for Brenda - accomplished Ponden House cook - (she wants the recipe) the remainder of the second cake flew to Bucharest wit us & still tasted absolutely delicious if slightly moist - when I make it again for a picnic I will try cooking with the open part of the plum up.
