Cheese Straws for Christmas

Only once a year and never enough!

Flaky pastry rolled thin into a large rectangle- best if made a la Delia with 5 oz cold butter grated into 8 oz Plain Flour, pinch of salt. mixed with cold water and then left to rest.

Cut rolled pastry into 2 equal sections. Spread one half pastry with English mustard and then finely grated strong cheese, as much as you can press on.

Fold over the plain section onto the other. This can be done in several goes if you have a lot of pastry and not just leftovers from another activity ( e.g Xmas sausage rolls).

Use the rolling pin to gently press the two pastry halves together. Then cut into long fairly thin strips.

Twist each strip firmly and place on a baking tray you have rinsed quickly under the cold tap rather than greased.

Dust with paprika or cayenne according to the taste of your audience.

Bake them in a hot oven 12 - 15 minutes or until they look good.

Even if the cheese all falls out, these never fail to please with drinks before the big dinner.
