Chicken in Cider

A good way to make sure that one chicken will definitely feed several hungry people

One free range chicken, seasoned and with an onion inside

  1. Slice a cooking apple and an onion and out on the base of a roasting tin
  2. Put the chicken on top
  3. Roast in hottish oven 1/2 hour
  4. Then pour 1 pint of dry cider over and add meatballs for another 45 mins approx

Meatballs:

I sausage per person out of its skin

  • Mix with finely chopped onion, chopped apple, thyme, a small quantity of fresh breadcrumbs and some beaten egg in suitable quantities for the number of sausages/your eaters.
  • Make into largish balls and brown in butter and oil.

Once the chicken is cooked, remove and make gravy by mashing the onion and apple in the tin, adding more cider, and then creme fraiche to produce a thick sauce to taste.
