Oven barbecued chicken

An easy, economical and tasty way of serving chicken joints, especially drumsticks for a crowd e.g a buffet when you want something hot as well as the salads.

  1. Put 6 pieces chicken, skin on, into a shallow dish and season
  2. Add some thin slices of lemon ( optional)
  3. Soften 1 onion in a little oil and then make a sauce in the pan with:
  • 4 level tablespoons brown sugar
  • 1 level tablespoon cornflour
  • 2 teaspoons made mustard
  • 2 and 1/2 oz tomato puree
  • 1/2 pint water
  • 1 teaspoon Worcester sauce
  • Juice of half a lemon

Simmer till thickened and taste - pour over chicken and cook, covered, 1 hour No4/150

Taste again before serving.
