An easy, economical and tasty way of serving chicken joints, especially drumsticks for a crowd e.g a buffet when you want something hot as well as the salads.
- Put 6 pieces chicken, skin on, into a shallow dish and season
- Add some thin slices of lemon ( optional)
- Soften 1 onion in a little oil and then make a sauce in the pan with:
- 4 level tablespoons brown sugar
- 1 level tablespoon cornflour
- 2 teaspoons made mustard
- 2 and 1/2 oz tomato puree
- 1/2 pint water
- 1 teaspoon Worcester sauce
- Juice of half a lemon
Simmer till thickened and taste - pour over chicken and cook, covered, 1 hour No4/150
Taste again before serving.
