A quick pudding that you could eat cold too. It is really best with ripe Victorias so it is worth waiting until they are plentiful.
1/2 lb or so ripe plums halved
2oz butter
2 oz sugar
2 oz SR flour plus 1/2 teaspoon baking powder
1 egg
Cook at No 4/150, for 25 minutes
Turn out

- Thickly butter a 7 '' sandwich tin and sprinkle on some brown sugar
- Lay plums in, cut side up
- Make a sponge by beating all the rest together
- Spread lightly over the fruit
Cook at No 4/150, for 25 minutes
