Peach Cobbler

This is another easy way to turn summer fruits into a pudding. It is an American idea and can be too sweet unless you have good quality peaches, ripe and well flavoured.You can make it with tinned ones of course but then it is too sweet for me.

Peach Cobbler

4 oz plain flour
1/2 teaspoon baking powder
2 tablespoons sugar
1/4 teaspoon salt
2 oz butter
75 ml single cream
1 large egg

  1. Rub butter into the flour as for pastry etc and then add the rest and beat until smooth.
  2. Grease a baking dish.
  3. Slice 6 peaches;toss with juice of half a lemon, 2 teaspoons of sugar (max) and 2 of cinnamon.
  4. Put the topping in blobs over the fruit in the dish, so you can still see it.

Cook 20 - 25 mins in a medium oven No 5-6
