Cheese and Onion Flan

  1. Make some pastry in the processor with 6 oz flour, 3 oz butter, or butter and lard mixed, plus enough water to bind.
  2. Line a 8'' sandwich tin, or a deep flan dish with the pastry. You will have some left over but if you do 4 oz flour it never is quite enough.
  3. Chop finely 1 enormous Spanish onion, or 2 ordinary ones, cover with cold water in a pan and boil until soft.
  4. Drain well.
  5. Grate lots of strong cheese as much as you like.
  6. Beat 2 eggs with some milk, about 1/4 pint, and season well.
  7. Fill your pastry case with the onions, seasoned, the cheese and lastly the egg and milk.
  8. Bake at No 6 30 mins or so until brown and firm.
  9. Eat hot or cold.
